Cute Easter Sweet Treat Ideas



Spring is one of my favourite seasons as I love all of the pretty pink cherry blossom, baby lambs and soft spring weather but I would be totally lying if I didn't admit that the Easter baking is one of my favourite things. The shops are always full of lots of yummy chocolate treats at this time of the year such as Mini Eggs, Milkybar Eggs and Malteaster Bunnies so it's only right that you treat yourself to some and bake some little goodies. I thought I would pop together a little blog post with some cute Easter baking and sweet treat ideas with a girly pink spin, of course... 



Easter Hot Chocolate With Bunny And Chick Marshmallows 
My first little treat is just a simple one that you can whip up in a couple of minutes and it's perfect for a cold or rainy afternoon as I often find that we can get some quite miserable weather around Easter. I just make my hot chocolates with some Cadbury's hot chocolate powder and some milk and then I added these adorable little pink bunny and lemon chick marshmallows from Home Bargains and some whipped cream. There are loads of options for this as I sometimes make a white hot chocolate for a little change and you could add Mini Eggs, crushed Creme Eggs or little Easter sprinkles too! 



Mini Egg, Milk And White Chocolate Cookies 
I've made these cookies for the past couple of years around Easter and they are originally a Tanya Burr recipe but I've tweaked them a little to add in some Mini Eggs which just make them even more chocolatey. They are so easy and quick to make as you can just use one large pink mixing bowl and they bake really quickly too so they are perfect for last minute Easter gatherings (and I always think it's lovely to smell homemade cookies baking in the oven...). 

Ingredients 
♡ 200g butter 
♡ 300g caster sugar 
♡ 1 large egg 
♡ 325g self-raising flour 
♡ 200g white chocolate 
♡ 200g milk chocolate 
♡ 160g Mini Eggs 

Method 
Preheat the oven to 200°C. Place the butter and sugar in a mixing bowl and beat until smooth. Crack the egg and mix in well. Add the flour gradually and mix until everything is combined. In a separate bowl, break up the milk and white chocolate into small chunks and crush the Mini Eggs. Add them all into the mixture and combine until you have a chunky dough consistency. Roll the mixture into small balls and place onto a baking tray but ensure that you leave enough space between them as they can be quite large cookies. Bake for 12 minutes and then remove from the oven. They will still be quite doughy at this point but they will harden up as they cool. Enjoy them fresh from the oven with a cup of tea or add some vanilla ice cream and sprinkles to make them into a dessert! 

Easter Milkshakes 
Another quick and easy little treat is Easter milkshakes which would also be perfect for any little ones to enjoy too. You could make your own milkshakes but I just bought some pink strawberry and vanilla ones and popped them into these adorable little milk glass bottles. I decided to make a vanilla one and top it with whipped cream and Mini Eggs and I also made a pink one and finished it with whipped cream and an adorable little bunny straw with a pink bow. I also added a little pink satin bow and a cute cherry blossom to make the perfect girly finishing touch. 



Cottontail Bunny Cocktail
I know that I called this one a cocktail but it is actually just some vanilla milkshake that I decided to pop into this pretty little glass. I did actually find a recipe on Pinterest for cottontail martinis which inspired me for this drink but I didn't fancy the coconut and pineapple as I felt like it was more of a summer cocktail. I just love decorating drinks to make them look even prettier so I added a little fluffy pink pom pom, some silver glitter from Unicorn Shimmer Co and this adorable little bunny straw complete with pink flowers and a ribbon. 



White Chocolate Mini Egg Easter Rocky Road
I had spotted this recipe from Jane's Patisserie a little while ago and I couldn't wait to make it as it uses three of my favourite things ~ white chocolate, Mini Eggs and marshmallows. This one is really easy to make and you could also vary it by using milk chocolate and mixing up your Easter chocolate goodies such as using Creme Eggs or Milkybar Eggs and I also decided to finish mine off with some delicate pink and white sugar flowers. I think this is the perfect sweet treat to make if you're having an Easter party or just to enjoy with a cup of tea in the garden. They would also make a cute little gift idea  as I wrapped mine up with some cellophane and accessorised them with pink and lemon bows! 

Ingredients 
♡ 400g milk or dark chocolate 
♡ 125g golden syrup 
♡ 125g unsalted butter 
♡ 100g mini marshmallows 
♡ 150g digestive biscuits 
♡ 160g Mini Eggs 
♡ 250g white chocolate 

Method 
Line an 8'' square tin with greaseproof paper and leave to the side. In a large bowl, melt the milk or dark chocolate, golden syrup and butter over a low heat and stir until smooth. Add in the marshmallows, chopped digestive biscuits and Mini Eggs. Fold together until all of the ingredients are well combined, pour into the tin and spread until the mixture is even. Melt the white chocolate, pour over the top of the rocky road and decorate with sugar flowers or Easter chocolates. Pop into the fridge to chill for around 30 minutes, cut into bite size chunks and enjoy! 



Pink Cherry Blossom Cocktail
I also cheated slightly with this one and called it a cocktail when I actually only used one ingredient but I just love making pretty drinks and snacks so let's ignore that! I used some of the Bailey's Strawberries And Cream liqueur which is a soft milkshake pink colour and tastes deliciously sweet and creamy but I'm not sure if it's still available as it was a limited edition drink. Some alternatives would be pink gin or prosecco mixed with a strawberry or candyfloss syrup for a girly cocktail. I added some little pink petals for a decorative finish but you also pop in some pink or silver glitter from Unicorn Shimmer Co or some shimmering rose gold dust from Pop A Ball! 



Vanilla Mini Egg Cupcakes
My last Easter sweet treat idea is these little Mini Egg vanilla cupcakes which are so simple yet so effective using It's Little Lauren's recipe. I always love making cupcakes when I get the chance and there's so many options for chocolatey Easter toppings so you could easily switch up the Mini Eggs for Creme Eggs, Galaxy Golden Eggs, Malteaster Bunnies or Milkybar Eggs. If you have a little more time to spare and are feeling creative, you could also make some bunnies, chicks, sugar paste flowers and pastel patterned Easter eggs out of fondant too! 

Ingredients for the cupcakes (makes 6) 
♡ 115g caster sugar 
♡ 115g butter 
♡ 115g self-raising flour 
♡ 1 tsp baking powder 
♡ 2 eggs 

Ingredients for the buttercream
♡ 145g butter 
♡ 205g icing sugar, sifted 

Method 
Preheat the oven to 170°C. To make the cupcakes, place all of the ingredients into a mixing bowl and beat together until they are well combined. Place even amounts of the mixture into six cupcake cases. Bake for around 20-25 minutes and cool on a wire tray. To make the buttercream icing, whisk the butter for 5-10 minutes so that it's fluffy and then sift the icing sugar into the same bowl. Combine the two together for a further 5 minutes. Pipe the buttercream icing onto your cupcakes using your favourite nozzle and finish with some Mini Eggs and some sugar flowers.
